Everyone needs to eat plenty of fresh vegetables. The elderly often lean towards easy-to-cook meals they find in the freezer section. All they need is a microwave. Those meals are also typically loaded with sodium, sugar, and fats.
November 12 marks National Pizza Day. Spend the day with your mom making veggie-packed pizza crusts that can be frozen and turned into pizzas for quick, healthy, and easy meals any night of the week.
Here are some recipes for vegetable pizza crusts.
Cauliflower Crust
Grate an entire head of cauliflower. Put in a fine strainer and squeeze to get out any excess water. Add two large eggs, a cup of shredded mozzarella, and one-quarter cup parmesan.
Line a baking dish with non-stick foil or parchment paper. Spread the cauliflower mixture onto the pan and bake at 425 for 25 to 30 minutes. Cool and wrap in foil to freeze or use immediately. If you opt to use the crust immediately, top it with a pizza sauce and favorite toppings. Bake at 425 for another 15 to 20 minutes.
Broccoli Crust
Grate one head of broccoli and mix with two medium eggs. Add black pepper to taste, one-half teaspoon of dried Italian seasoning, and one-quarter teaspoon of garlic salt. Spread onto a pizza pan that’s been sprayed with olive oil. Bake at 425 degrees for 20 minutes. Cool and freeze the crust or immediately add toppings and bake for another 15 to 20 minutes.
Spinach and Cheese Crust
Take four cups of fresh spinach and place in a blender or food processor. Puree it until all leaves are chopped. Move to a bowl and stir in two large eggs and one cup of shredded Italian cheese mix. Add two teaspoons of dried Italian seasoning and one-quarter teaspoon of garlic powder.
Prepare a baking sheet by lining it with parchment paper or non-stick foil. Spread the spinach mixture onto the pan and bake at 425 for 20 to 25 minutes. Use the crust immediately or let cool. Once cool, wrap in foil and freeze. If you make the pizza immediately, add sauce and toppings and bake for another 20 minutes or until the cheese is bubbly.
